American Bresse

This remarkable table breed is considered a national treasure in its native France. Reputed to be the best-tasting chicken in the world, a roasted Bresse can cost hundreds of dollars at a Parisian restaurant. Greenfire Farms is the original and only importer of this extraordinary breed.


About 500 years ago, Bresse (rhymes with “bless”) emerged as a distinct chicken breed in the former province of Bresse in eastern France. Somewhere between the Rhone River and the French Alps sits a 60-mile by 25-mile swath of fields and woodlands. Here the breed was formed from a now-forgotten mix of local fowl. Through a combination of luck and selective breeding, small flocks of poulet de Bresse that dotted the French countryside soon earned the reputation of having a unique and exquisite flavor.


The drive to forage appears to be built into the Bresse genetic code. The long-standing French practice of feeding low protein feeds has resulted in birds that forage heavily for bugs, worms, and other nutrition. The Bresse has a genetic lineage that allows them to metabolize their food in a unique way which helps to create a different flavor as well as meat, and fat, growth pattern. Additionally, the meat-to-bone ratio is vastly different from traditional meat chickens because their bones are quite thin and dainty.


American Bresse are a medium sized dual-purpose breed. They are of long body, elegant, alert, fine boned, thin white skinned. The goal is to improve the type of egg layer and flesh qualities. All body features balanced in size and proportions with strong fleshing down the keel line.

They grow very rapidly until they reach their adult weight of up to 8.5 pounds.

It’s their tastebud-exploding meat that has been sought after for centuries. With light, thin, skin and firm yet luxurious meat, it is said that the flavor is nothing like the commercially raised poultry from the local grocery store. If you are a foody and love chicken, then add the Bresse to your bucket list. A bird that was raised for royalty is bound to be a sensational experience.
